Oil & Sugar
Fat is texture; the sugar that cracks is memory.
Olive-oil-washed whisky · Oloroso / PX sherry · Burnt-sugar syrup · Flaky salt · Glassy sugar shard
The memory is a slice of warm toast with a good pour of olive oil and sugar on top — the simplest afternoon snack there is. The right question wasn't how to put bread in a glass, but what its soul is: fat, sweet, toasted cereal, and the crunch of glassy sugar. Three of those four are flavour; the fourth is texture, and it's half the memory.
Toasted bread is grain, so the base is whisky: barley, Maillard, a nutty backbone. The oil comes in by fat-wash — the whisky is washed with a good arbequina EVOO, silky and grassy without any cloudiness — and the glassy sugar becomes a shard that cracks as you drink. The real problem, as in the Avocado Margarita, is the fat: it's texture, not flavour. You dose it and correct it with salt, never with more sugar.
The mother ingredient is the olive-oil-washed whisky — infused, frozen and filtered. One production, and each direction places the oil and the sugar somewhere different: inside the spirit, floating on top, as a torched crust, or giving way to the cereal.
Method
A stirred drink over olive-oil-washed whisky, barely sweetened with burnt sugar and tuned with a pinch of salt. Four directions that split the fat and the sugar differently to solve the same tension: fat as texture, restrained sweetness, and the crunch as the nostalgia trigger.
Arbequina-EVOO-washed whisky — 3:1 infusion, frozen and the fat filtered off. One production for the whole La Merienda series.
