Black Garlic Dirty Martini
Umami does the work of salt.
Vodka or gin · Dry vermouth · Confit-garlic brine · Black garlic · Olives (Manzanilla · Campo Real · Gordal · Milagros del Sur)
It was born at home: a Dirty Martini built on the brine of some confit garlic cloves instead of olive brine. The right question wasn't whether black garlic belongs in a Martini, but what black garlic lets you do that olive brine can't. The answer: separate depth from salt. Black garlic is fermentation's sweet umami; a Dirty is salt. Together, umami carries the savoury and the salt can retreat — and the Martini stays a Martini: cold, clean, spirit-forward.
The real problem isn't flavour, it's the edge: a Dirty lives between seasoned and seawater, and the brine's cloudiness fogs both the glass and the palate at once. On top of that, black garlic's sugar threatens to turn it sweet and cloying. So the exploration isn't about how much garlic — it's about where you put the dirty: in the brine, in the vermouth, behind the olive, or washed into the spirit.
They all share one black brine: reduced confit-garlic brine plus black garlic purée, with the salt measured. One production, and what changes between drinks is the olive. The base is a lever, not a decision: vodka as the house default —it lets the garlic and the olive lead— with gin as the offered alternative. The same dirty, two readings.
Method
A Dirty Martini built on a standardised black brine (reduced confit-garlic brine + black garlic purée, salt measured). Base of choice — vodka as the house default, gin as the alternative. Stirred very cold, strained, frozen glass. Five directions that place the black garlic in a different spot —brine, vermouth, the olive's marinade, or washed into the spirit— to solve the same tension five ways: salinity, umami and clarity.
